This innovative function allows for the machine to dehydrate at a higher temperature for the first few hours and then it will automatically decrease to a lower temperature to complete the process. This provides a decreased dehydration time without compromising the life of the essential enzymes. It is noted that produce can stand a higher temperature in the initial stages of drying and this will prevent the risk of bacteria breeding causing fermentation. Dual Fan Technology
The twin fan technology with the Sedona Dehydrators enables for the two fans to be operated separately. When all nine trays are occupied, both fans will be in use. However, if you only require a few trays, then the solid dividing tray will efficiently isolate the top or bottom half of the dehydrator and only one fan can be used. Advanced Drying Trays

There is also a pause button for the fans on the digital display panel and the dehydrator will also pause when the glass door is opened. This is to retain the heat inside so that the fans don’t blow the heat outwards. And not to forget, the TST alternate temperature setting which allows for the dehydrator to automatically change to a lower temperature without any human interference.
